Criteria (how we score)

Sauce matrix

Each pairing is judged on:

  1. Flavour fit — does it amplify potato / fish / batter?
  2. Texture — does it destroy crispness immediately?
  3. UK availability — can a normal shopper or chippy customer get it?
  4. Tradition weight — not a veto, but context matters
  5. Reheat dignity — still edible cold or lukewarm?

Scores are S / A / B / C / Avoid bands, not fake decimal precision.

Core matrix (chips)

  • Tartare is classic for a reason: fat + acid + pickle crunch.
  • Vinegar on fish is correct; drowning is not.
  • Sweet chilli can work on specials; on battered cod it often tastes like a different restaurant crashed the party.

Loaded fries vs chippy chips

Loaded fries are a construction project (cheese, meats, pickles). Chippy chips are a purity test. Scoring loaded combinations with chippy rules is how wars start. We separate them mentally even when the potato is related.

House rules for arguing with us

  1. State your region.
  2. State whether the chip was good before sauce.
  3. Do not cite a single airport chippy as national proof.
  4. Bring a better criterion if you want a rescoring.

FAQ

Can I recreate chippy chips at home perfectly?

You can get close; identical industrial fryers and throughput are rare at home.

Is beef dripping always better?

Flavour fans often prefer it; many shops use other oils for cost, diet, or supply reasons. Taste, do not dogma.

Are premium crisps always better?

Thicker textures can win; price per gram and freshness matter more than branding.
